Confession: I had never eaten pumpkin seeds until a couple years ago.
I mean, I knew they were edible and all, but I had no idea they were the addicting, healthy snack they've become to me today. I've created a simple, no fuss recipe that my husband and I both enjoy.
I'm usually a "throw in this spice and that spice" kinda girl, but I'll give detailed measurements and instructions for those of you who are more by the book. I made the recipe for about 1 cup of seeds.
(Side note: I recently found a recipe for a TO DIE FOR creamy Cajun pasta that I wrote in college . Unfortunately, I only listed ingredients and not measurements. NOT helpful.)
Anyway, these roasted pumpkin seeds are simple, healthy, and literally take 10 minutes of work (the rest is just waiting for them to cook).
First, you need to scrape out your pumpkin to get all of the pulp and seeds out.
Next, separate the seeds from the pulp. The big chunks are easy to get at, but the little stringy stuff takes a bit more patience. When you're done with this step, it should look like this:
As you can see, I wasn't incredibly picky with getting the pulp out, because next you rinse the seeds in a colander.
After they're all squeaky clean, pat them dry for a bit. You're really just getting the excess water off, so don't worry about drying each little seed. They're still kinda slimy at this point.
Pour in a tablespoon of olive oil, and mix the seeds to make sure they're evenly coated.
Time for spices! Sprinkle in your salt, pepper, garlic powder, onion powder, and paprika.
Give a good stir, and lay out on a cookie sheet. Check out this cute little stone for my toaster oven!
Bake at 325 for 15 minutes, stir around/flip, and then bake for another 8-10 minutes. The result should be crunchy, delicious pumpkin seeds!
Savory Roasted Pumpkin Seeds
1 cup of cleaned pumpkin seeds
1 Tablespoon olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
1 1/2 teaspoon onion powder
1/2 teaspoon paprika
Stir in olive oil, and then add spices. Stir until evenly combined, and spread out on cookie sheet. Bake at 325 degrees for 15 minutes, then flip and bake for another 8-10 minutes. Enjoy!
